Bread Baker - Pie Room by Curtis Stone

Job Summary:
We are seeking a passionate and skilled Bread Baker to join our team at Pie Room by Curtis Stone. This role involves crafting a variety of artisanal breads, including sourdoughs, baguettes, and stecca, as well as enriched doughs like brioche and croissants. The Bread Baker will be responsible for mixing, shaping, and baking, ensuring the highest quality and consistency in every loaf. With an early start time of 1-2 a.m., you will play a crucial role in setting the standard for our bakery each day.

Key Responsibilities:
• Mix and prepare bread doughs, including sourdough, baguettes, stecca, brioche, and laminated doughs for croissants.
• Shape and proof breads with precision to achieve consistent quality and appearance.
• Manage baking schedules, oven temperatures, and steam injection for optimal results.
• Monitor and adjust fermentation to align with production timelines and desired flavor profiles.
• Assist with scaling ingredients and maintaining accurate recipes.
• Maintain a clean and organized workspace, adhering to all health and safety standards.
• Ensure efficient use of ingredients and minimize waste.
• Collaborate with the team to streamline workflows and meet production goals.

Qualifications:
• Proven experience as a bread baker, preferably in an artisanal or high-volume setting.
• Strong understanding of dough fermentation, shaping techniques, and baking processes.
• Familiarity with working with sourdough starters and laminated doughs.
• Ability to work efficiently during early morning hours with minimal supervision.
• Excellent time management and organizational skills.
• Commitment to producing high-quality baked goods with attention to detail.
• Knowledge of food safety and sanitation practices.

Working Conditions:
• Shift starts at 1-2 a.m., with flexibility for weekends and holidays as needed.
• Physical requirements include standing for extended periods and lifting up to 50 lbs.
